Breakfast Hash – A Delicious Eggless Breakfast Option
Written by Michele Vieux

I came up with this recipe when I bought one of those giant pork loins (that are always on sale) at the grocery store for a dinner party and didn’t know what to do with the “ugly half” which is what I call the end that has the tasty, yet not as appetizing, darker meat. Not only is it a breakfast alternative to eggs, it also makes a tasty snack.

Ingredients:

3-4 lb. pork loin roast

2 T. Liquid Smoke

1-2 t. minced garlic

1 onion, thinly sliced

2 stalks celery, sliced

2 red bell peppers, thinly sliced

6 Fuji (or other tart, crisp apple like Granny Smith), cut in large dice

1T. olive oil

Red Pepper Flakes (optional)

Salt & Pepper to taste

Crushed Almonds or Walnuts

Directions:
Rub liquid smoke on outside of pork loin and roast in 375 degree oven for 35-45 minutes until pork loin is cooked medium to medium well.  Remove from oven and let rest while you prepare the remainder of the hash.

Place olive oil, garlic, onion, celery, bell peppers, apples, red pepper flakes, salt & pepper in pan and sauté over medium-high heat for 2-3 minutes.

Cut pork loin into large dice and add to pan. Cook for another 2-3 minutes and serve with crushed nuts on top. Save the rest for the next day’s breakfast, lunch, or snack!

Makes 10-12 servings.

  1. I love the Filthy Fifty…

  2. Will be working abroad all week so only late-night-hotel-room sessions. Did handstands. Hspu’s and situps today,

  3. According to the blog posted 1/19, the photographer is supposed to be taking before pics today….I did not see anyone set up when I was there for the 9:30 session (32:54 rough). What is the deal?

  4. Photos will be taken on February 1. All participants will be receiving an email with all details regarding the photo session and initial workout. Be patient, stay tuned.

  5. I think it would be filthier if it were 5 rounds for time.

  6. Did this late last week. 23:05. K2E were fairly strict. Some swing in the legs but tried to keep my arms as vertical as I could. Got off the ghd at 12:56, the burpees killed. DU’s unbroken, I’m usually not that lucky at the end of this wod that I don’t miss at least a few times.

  7. 39:00….death!

  8. Thanks for programming this workout! I love leaving the gym and feeling totally spent! Thanks for programming benchmarks every now and then. Filthy 50 was great…hell but great.
