1 -3 really large bunches of red dandelion greens
1-2 cloves garlic
1-2 tablespoons olive oil


If you like, trim a bit of the greens&#039; stems off (I don&#039;t) and chop the remaining blades into 3-4&quot; segments. 

Crush the garlic and get it started in some moderately hot oil; once the aroma gets going, drop in the greens and let them cook down at medium for about 3 minutes, coating the leaves well with the garlicky oil. Dandelion greens hold a lot of water, so no need to add any broth, just reduce heat a bit and cover until tender.  I can eat a whole bunch by myself, so bear that in mind when considering quantities.  If you don&#039;t like the bitterness of greens (I happen to love it), a dash of lemon will help cut it, or you can toss in a bit of red sweet pepper while cooking to mollify.

Some of you may consider supplementation, particularly when shopping at a place like Henry&#039;s, which has a whole section of the store dedicated to herbal, natural, organic products in addition to food.  If so, keep the following visual in mind: a bubble &quot;worth it&quot; chart evaluating supplements based on availability of supporting evidence based on human studies (controlled and randomized):

I think it looks pretty cool and I was saddened to learn that no studies involving mega doses of Vitamin C have been done.  I have been taking 2-4 grams a day, worth it or not.
