Easy Summer Dessert Idea

Summertime means grilling time! This is the time of year most of us dust off our grill and start cooking meat outdoors. I am here to tell you that the grill isn’t just for meat anymore!
I am a proponent of grilling everything – meat, veggies, salads and desserts. Yes, I said it – DESSERT. You CAN eat dessert, and you CAN grill it. Here’s how:
- Choose your favorite seasonal fruit. I like to use peaches, plums, pears, or nectarines.
- Quarter or halve your fruit of choice and remove any pits or seeds.
- Toss in balsamic vinegar and let rest until you are finished cooking your meat & veggies.
- Place fruit on grill over medium-high heat until it begins to crisp and caramelize.
- Turn fruit to cook for about 3 minutes on each side.
- Remove to plate and cover while you enjoy your meat & veggies. The fruit will create its own delicious, juicy syrup.
- Serve up fruit with the syrup it created and sprinkle with nuts or coconut.
If you have leftovers, use some the next day for breakfast. It’s delicious cold too!
